How do I choose between INCOM's A-01 and A-02 grades?

A-01 (2800–3000 cps) is the higher-viscosity grade, best where maximum body and freeze-thaw stability matter, such as ice cream, baby food and fine cosmetic texture control. A-02 (2400–2600 cps) is a more cost-efficient, versatile grade used across sauces, bakery, meat and industrial applications.
